Hi, I'm Julius Fiedler, but who's Hermann?
In Germany, Hermann is not only an elegant name, but a ‘Freundschaftskuchen’ (friendship cake). In essence, it is a sweet, yeasted starter dough, which continues to grow over time to a point where you give the natural surplus to your friends to use in a cake. It is basically an edible chain letter. But more importantly, it is the philosophy to pass something on, a cake but also a skill, that might last forever.
During the COVID pandemic, I hosted online sourdough baking classes under the name Baking Hermann. Afterwards, I assisted Jamie Oliver as a food stylist for over a year and now I film and share my own food content. I currently focus on natural plant-based food that is inspired by vegan cultures. 🌾

Tuscany's Traditional Dishes Are VEGAN?! Unseen Food of Italy + Animal-Free Farming!

Tuscany Food Tour:
First, I'm in Volterra to meet up with Giulia Scarpaleggia ( julskitchen). We're tasting Orzo, a barley-based coffee, at L' Incontro (maps.app.goo.gl/aAE9yH69WEG3f91EA), before heading to Pizzeria del Corso (maps.app.goo.gl/Shn4PVP4jGPMCgFh6) for a Torta di Ceci. After that, she brings us to Ristorante Da Beppino (maps.app.goo.gl/p8f7QZ6B5KoQ7FWV8) for Panzanella and Pappa al Pomodoro.
We also visited Giulia's studio and cooked two traditional Tuscan dishes. Her favourite Pappa al Pomodoro as well as Castagnaccio, a Tuscan cake made out of chestnut flour.
I always wanted to learn what a farming system without animals would look like. That's why I visited Agrivilla I Pini (maps.app.goo.gl/drfBTctMJ6mhWZ4g9) and met up with the head chef Lahiri. He took me on a tour through the garden, showed me how they make a manure from wild plants and also taught me how to cook Pici all'Aglione to which he added some nettle powder, which surprisingly has 40% protein!
Finally, I visited I Seminanti (maps.app.goo.gl/G7gKGqyUBdcwzAoC9), a seed to bread bakery that bakes traditional Tuscan bread. Tuscan bread is notorious for lacking salt and I learned what that's all about. We finished the day with a traditional Panzanella in the garden.
The Mission:
Most cultures have traditional vegan dishes in their culinary repertoire, be it because of religion or poverty. These dishes are oftentimes in a healthy relationship with their immediate surroundings. My goal is to find and share these foods so that we can embrace the local culture even if on a plant-based diet.

Great idea! Except grind ginger and garlic separately, they require cooking at lower even temperatures while the sauté mixture is dry…adding tomatoes or moisture with ginger garlic paste leaves a raw taste.
So much resting in making bread...but in fairness the bread deserves to rest as I will do nothing but rest after consuming an entire loaf of it

Idli is not a source of protein it’s just a healthy breakfast which gives you energy and improves gut health but if you combine it with 3 boiled eggs and an apple . It becomes ultra high quality breakfast which one can eat eternally.
I like the cookware you use.
Try GHUGNI recipe from Eastern part of India. Similar recipe, made with yellow dried peas. You can eat with roti/puri Or amp thr taste of the curry by adding chopped raw onions, fenugreek leaves, green chillies, tamarind chutney etc and have as a chaat.
It is a healthy food, but it also increases acidity because of fermentation.

We have Ghugni from West Bengal in India which is an Indian version of this !! Ghugni is more flavourful though !! ❤❤
